Amazing texture and flavour!
Lingcod (ophiodon elongatus) is highly prized in the Northwest and Japan... the fishery in Alaska is tightly monitored, with a total annual catch of a little over 500,000 lbs.
The fishery we work with in Alaska only target Lingcod exclusively in the April/May period. They are line-caught and each fish is handled individually to prevent the possibility of bruising... then frozen onboard within minutes of capture.
